Banana Bread Waffle Recipe

The World seems to be obsessed with banana bread right now because everyone is making bread during the quarantine. Banana bread is great and requires no yeast. One thing that stinks about banana bread is how you have to wait for it to bake in the oven. With banana bread waffles, you can have one ready in less than 5 minutes and still get that great banana bread flavor.

How do you make the perfect waffle? First, you need a waffle iron and a great waffle recipe.  Once you master making waffles, you can come up with so many flavor ideas or combos or even make savory waffles. These banana bread waffles are crispy on the outside and light and fluffy in the middle.

Some great waffle irons to purchase are the Dash No-Drip Belgian Waffle Iron or the Dash Mini Waffle Maker (Amazon affiliate links). If you are making mini waffles, add in half the recommended amount for batter than what the recipe calls for.

Ingredients List

Self Rising Flour – If you don't have self-rising flour sub-all-purpose flour. Add in 1 tsp of baking soda with the flour.

Bananas – Must be very ripe. They are easier to mash.

Unsweetened Almond Milk – 1% or skim will also work.

Semi-Sweet Chocolate Chips – Chocolate chips add more points to the waffles depending on what kind you use. Lilly's Premium Baking Chips are lower in points than regular chocolate chips are but are also more expensive. The Dark Chocolate Chips are 2 points for 60 chips.

How to make Banana Bread Waffles

  1. Heat waffle iron and grease with cooking spray.
  2. In a large bowl, whisk together flour and salt.
  3.  In another large bowl, mash ripe bananas with a fork. Then incorporate the egg, egg white, Greek Yogurt, unsweetened milk, and vanilla.
  4. Gradually add dry ingredients to wet ingredients until just combined. Fold in chocolate chips.
  5. Add 1/2 cup batter to the waffle iron. Close and cook until golden on both sides. Transfer waffle to a plate and repeat with the remaining batter.
  6. Serve with good maple syrup.

Toppings for Waffles

What else can I add on top of my banana bread waffles? I like to add sliced bananas and fresh maple syrup on top.  Otherwise, you can also use fresh seasonal fruit, vanilla ice cream, whipped topping, chocolate sauce, or caramel sauce. Am I making you hungry for waffles now? To make this a more filling breakfast, serve with scrambled eggs and some type of breakfast sausage.
